Egg Burritos

I will admit, this is not at all an original concept. It is, however, a tasty and easy breakfast that I have made for… well it’s just none of your business what a lady’s age is. I’ve been making them for decades, alright? Point is, they’re easy. They’re cheap. And potentially most important? They can be meal prepped and turned into a grab-and-go on a busy morning.

Now I’ll tell you up front, the amount of egg you can fit in each burrito depends solely on how big the tortilla is. If you’ve got the smalls, they’ll fit one egg. If you’re using mediums, they’ll fit two. This is one of those decisions you make based on your preferred egg-to-tortilla ratio, and what sort you have on hand.

Can you add other sauteed veggies or even potatoes to these burritos? Absolutely! I’d say the sky’s the limit on how you choose to customize your egg burrito experience, but honestly the only limits are going to be your personal budget and the size of your tortilla.

Ingredients

  • 6 eggs

  • 3 oz shredded cheese

  • 1/3-1/2 cup chunky salsa, or pico de gallo

  • 6 tortillas

Directions

  • In a medium mixing bowl, whisk eggs together until yolks and whites are combined. Add salsa and mix to combine.
  • Heat a skillet over medium heat. Add whatever cooking oil or spray you prefer, if it isn’t a non-stick skillet. (Of if your non-stick still sticks… add the oil.)
  • Scramble eggs over medium heat until just sort of doneness.
  • Divide cooked eggs into the centers of the tortillas and top them with approximately 1/2 oz of cheese, each.
  • Roll each burrito, then put in microwave for a quick 30 second zap to heat through and melt cheese. Optionally, you can toast them in the skillet on both sides until crispy.
    Note: If you are making these for meal prep, skip this step and store them in your fridge or freezer until you’re ready to eat them.

Notes

  • Add more cheese if you like it.
  • If you don’t have shredded cheese in the house, you can use sliced cheese. Fold each slice in half and lay them in the center of the burrito, then place the cooked eggs on top.
  • For those following the Emergency Dollar Tree meal plan, use 1/2 of one can of Rotel in place of salsa.
  • Or just use Rotel if you have it and prefer it to salsa.
  • If you wanna spruce these up, feel free to saute any veggies or potatoes you have at hand and add them to the scramble. (I have used the last handful of french fries in the freezer, chopped into a dice.)
  • Another good choice is any cooked sausage or bacon you might have, crumbled and added to the scramble.
