I confess, this recipe has a special place in my heart. In fact, I’d say it helped capture my husband’s heart too. It was the first meal I cooked for him ever. Plus a side salad and a cherry cheesecake for dessert. But don’t worry, it’s far less expensive than you might think. It’s not authentic, ergo the “Cheater’s” part. But it is right tasty and great for a hurried night when you really want pasta but don’t want to pay for delivery.
Ingredients
- 4 frozen chicken patties
- 1 jar spaghetti sauce
- 4T. grated Parmesan
- 4oz mozzarella (or Provelone)
- cooked pasta for serving
Instructions
- Preheat oven to 400 degrees. Spray baking pan with an oil to prevent sticking.
- Place frozen patties in baking pan. Top with 1T Parmesan, each. Follow with 1/3 cup of spaghetti sauce and 1oz mozzarella each.
- Cover with foil and bake for 20 minutes. Remove foil and bake additional 10 minutes until cheese is bubbly and starting to brown.
- While chicken is baking, prepare pasta of choice according to package directions.
- Serve chicken on bed of pasta, using any remaining sauce, if desired.
Tips and Tricks:
- Obviously we prefer to eat this with spaghetti. Hubs likes to add additional tomato sauce to the noodles, but you do you.
- As mentioned above, a nice green salad with a tangy vinaigrette makes for a fantastic side that balances out the heaviness of the main dish. Steamed green beans or broccoli would also be a fantastic choice.
- Another option for serving is to simply put the chicken patties on a toasted bun. Yum!
- Don’t feel you have to limit the cheese. If your budget allows and you wanna go hammy with the Parmesan, knock yourself out. There’s never such a thing as too much cheese.
