Blackberry-Goat Cheese Salad

I’m so excited for Spring, when all the berries are at their sweetest… and cheapest! Why? Because I’ve fallen in love with this easy salad and it’s tastiest when the baby greens are copious and the berries are everywhere.

Welcome to my Blackberry-Goat Cheese Salad!

It’s easy peasy lemon squeezy… without lemon unless you just want some. My preference is to splurge a little for a champagne vinaigrette. If you make your own dressings or don’t care for that one, other great options are: balsamic vinaigrette, poppyseed dressing, sweet Vidalia onion dressing, or even a honey mustard. You want something that has a touch of sweetness along with a touch of acid.

Ingredients

  • 2-3 cups young greens (baby greens, spring mix, etc)

  • 3 oz fresh blackberries

  • 1-2 ounces goat cheese, crumbled

  • 1 oz nuts, chopped

  • 1 serving dressing of choice

Directions

  • Wash and chop greens, if not already done. Layer clean greens into a large bowl or dinner plate.
  • Sprinkle on fresh, clean blackberries.
  • Sprinkle on goat cheese in desired amount.
  • Sprinkle on nuts of choice.
  • Dress salad and enjoy!

Notes

  • Adding a slice or two of a crusty bread can make this a light lunch.
  • The suggested dressing (personal preference) is champagne vinaigrette. However, any dressing that has a touch of sweetness and acidity will pair beautifully with the salad. Suggestions include: balsamic vinaigrette, poppyseed, sweet Vidalia onion, or honey mustard. (Creamy dressings like ranch or blue cheese are not advised.)
  • Other veggies can be added to the salad to bulk it up without disrupting the flavor, such as shredded carrots, finely diced cucumber, and diced red bell peppers.
