So a long-standing, not-so-secret secret to guard against an out of control food budget is to keep basic ingredients on hand, allowing you to whip up an easy fast meal without shopping while hungry or hitting the drive thru. These burritos are one such meal. They only take 4 ingredients, five if you’re feeling flush with money. And all of them are items I consider staples in my house, so they’re available all the time. When I use up the last of one? It goes right on the grocery list to replenish.
What are these ingredients, you ask?
Tortillas + Refried Beans + Cheese + Salsa
That’s right, folks, my Go To dinner? Bean and Cheese Burritos!
Mind, you can absolutely add taco seasoning to add more flavor to the beans, and if you have no salsa, but half a can of Rotel in your fridge instead? That’ll work. These are very flexible burritos. Want to garnish with sour cream, guac, leftover cheese dip, or more salsa? Also tasty! Have some leftover taco meat from Taco Tuesday? Mix that in!
Honestly, though, I feel like the best part about these burritos is no stovetop is required. So if you have a microwave and a plate? You’re golden. Dinner in under 5 minutes.
Bonus Meal: If you have some leftover filling and a small, street-taco-size tortilla in your house, you can smear that filling on the tortilla and add a fried egg for a quick breakfast taco. Yum!
Bean and Cheese Burritos

1 1/2 cups refried beans (or one can)
1/3-1/2 cup salsa (or rotel)
Cheese! (measure with your heart)
1-2 T. taco seasoning (optional, but tasty)

Directions
- Mix beans, salsa, cheese and taco seasoning in a microwave safe bowl.
- Heat filling in microwave for approximately 3 minutes, until bubbly and cheese is melted.
- Place 1/3-1/2c warm filling into center of tortilla, making a long rectangle that leaves about an inch space from the edge. (Amount will vary based on tortilla size.)
- Fold edges over the short sides of filling rectangle. Fold bottom long edge over the filling, then tuck it in snug. Flip the burrito over and over to finish rolling until tasty familiar food is accomplished.
- Place burrito in microwave on a microwave safe plate for approximately 30 seconds.
- Garnish with whatever goodies you have in your house, and serve with fresh salad, tomato slices, and/or corn.
